Simple Spanish Omelette

In around 15 minutes, you can enjoy a taste of Spain with our Simple Spanish Omelette. All you need is garlic, onion, oregano and seasoning and you can take your tastebuds on a holiday.

Serves: Two

Time: 15 minutes

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 cup onion, sliced thinly
  • 4 garlic cloves, minced
  • 2 tablespoons chopped fresh oregano, divided
  • 3/8 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 large eggs


Method
Heat a medium pan over medium-high heat and add one of tablespoon of oil. Add onion and garlic and cook for five minutes, stirring frequently. Remove onion mixture from pan and set aside. In a small bowl, add the oregano, salt, pepper and eggs, and whisk. Return the pan to medium heat and heat remaining oil. Add the egg mixture and cook for one minute. Lift edges of omelette with a spatula, tilting pan to roll uncooked egg onto bottom of pan. Cook for a further minute. Arrange the onion mixture into the centre of the omelette. Run spatula around edges and under omelette to loosen from the pan and then fold in half. Serve with a sprinkle of oregano.
