Todd’s Tuscan Vegetable Soup

Nothing beats a bowl of steaming hot soup on a cold winter’s day and Todd’s Tuscan Vegetable Soup will hit the spot.

Ingredients
1 can (400g) cannellini beans, drained and rinsed
1 tablespoon olive oil
1 large onion, diced
2 carrots, diced
2 stalks celery, diced
1 large zucchini, diced
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 litre of chicken broth
1 can (400g) diced tomatoes
2 cups chopped baby spinach leaves
1/2 cup grated Parmesan
1 tablespoon chopped fresh thyme leaves
2 teaspoons chopped fresh sage leaves

Method
Heat the oil in a large soup pot over medium-high heat
Add the onion, carrots, celery, zucchini, garlic, thyme, sage, 1/2 teaspoon of salt and 1/4 teaspoon of pepper
Cook, stirring occasionally, until the vegetables are tender
Add the broth and tomatoes with the juice and bring to a boil.
Add the beans, half the Parmesan cheese and the spinach leaves
Cook until the spinach is wilted
Serve topped with Parmesan.


Bob’s Blueberry Cake

Blueberries may not yet be in season but frozen berries work just fine making Bob’s Blueberry Cake a year-round treat.

Ingredients

1 cup plain flour
1 cup whole wheat flour
1 & 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup unsalted butter (room temperature)
1/2 cup sugar
1/4 cup maple syrup
1 large egg
1 teaspoon vanilla extract
1/2 cup milk
2 cups blueberries

Topping
1/4 cup plain flour
1/4 cup whole wheat flour
1/2 cup brown sugar
1/4 cup maple syrup
1 teaspoon ground cinnamon
1/4 cup butter (melted)

Methods
1. Mix the flours, baking powder and salt in a large bowl.
2. Cream the butter and sugars and mix in maple syrup
3. Mix the egg and vanilla into the butter mixture.
4. Mix the flour mixture and milk into the butter mixture.
5. Fold in the blueberries.
6. Pour the batter into a greased 10 inch spring form pan.
7. Mix the flours, sugars, cinnamon, maple syrup and butter in a bowl until crumbs form.
8. Sprinkle the crumbs on top of the cake.
7. Bake in a preheated 180C oven until a toothpick pushed into the centre comes out clean, about 60-70 minutes.

Tax-time Teacake

Ingredients
60g butter
1 teaspoon vanilla essence
1/2 cup sugar
1 egg
1 cup SR flour
1/3 cup milk
15g melted butter
1 tablespoon castor sugar
1/2 teaspoon ground cinnamon

Method
Grease a round cake tin and line it with greaseproof paper.
Beat the butter and vanilla together until white and creamy, add the sugar and continue beating.
Add the egg and beat a bit longer.
Add half the flour and half the milk, mix well, then beat in remainder. Don’t over beat.
Spoon the mixture into the cake tin and bake in a moderate oven for about 25 minutes or til golden (cake should shrink slightly from sides of pan. If you’re not sure – poke a skewer into the middle and it should come out dry).
Turn cake out onto serving plate. Brush the top immediately with the melted butter and sprinkle with the cinnamon sugar.
