10-minute Ginger Chicken

Chicken is a staple of most diets but finding something different to do with it can be a challenge. This 10-minute Ginger Chicken is tasty and quick to make, definitely worth adding to your recipe file.

Ingredients
(Serves two)

1 large chicken breast, diced
2 tablespoons cornflour
100g snow peas
2 tablespoons vegetable oil
Small piece of ginger, cut into matchsticks
2 small spring onions, sliced
75ml chicken stock
Dash of soy sauce
Dash of fish sauce
Juice of ½ lime

 

Method
Bring two cups of water to the boil.
Coat the chicken in cornflour and poach in the boiling water for one minute, then remove, draining off excess water.
Heat the oil in a wok and add ginger, spring onion and snow peas.
Fry lightly then add chicken and cook until golden.
Add soy, fish sauce and chicken stock, then stir in lime juice.
Remove from heat and serve with rice.
