Apple and Cinnamon Muffins
Muffins make a great breakfast food, mid-morning snack or afternoon treat. And these Apple and Cinnamon Muffins are a healthier option when you just need something sweet.
225g self-raising flour
150g wholemeal flour
2 teaspoons cinnamon
100g brown sugar
2 apples, peeled and grated
2 tablespoons margarine, melted
310ml skimmed milk
1 egg, lightly beaten
1 teaspoon vanilla essence
Preheat the oven to 180° and grease a 12 hole muffin pan.
Sift both flours and cinnamon into a large bowl and stir in brown sugar, sultanas and grated apple.
Make a well in the centre of the mixture. Whisk together with a fork the margarine, milk, egg and vanilla, then add to the flour mixture.
Stir gently until the mixture is just combined and spoon the mixture into the prepared pan.
Bake for 20 minutes or until muffins have risen well.
Leave to cool in the pan for a few minutes, then remove and cool at room temperature, or eat while still warm.
