Berry French Toast

FONT SIZE: A+ A-

Ingredients
2 tablespoons cold water
60 g caster sugar
150 g frozen/fresh mixed berries
2 eggs
50 ml light cream
50 ml reduced-fat milk
1/2 teaspoon ground cinnamon
15 g butter, chopped
4 slices thick fruit bread
100 g vanilla yoghurt, to serve

Method
Place two tablespoons of cold water and half of the caster sugar in a small saucepan and stir over low heat until the sugar dissolves. Increase the heat to high and bring mixture to the boil. Cook until the mixture thickens and remove from heat. Stir in the berries and set aside.

Place eggs, cream and milk in a bowl. Whisk until combined. In a separate shallow dish, combine the cinnamon and remaining sugar. Melt half the butter in a frying pan over medium heat. Dip four slices of bread, one at a time, in the egg mixture until soaked and cook bread for two minutes on each side. Remove each piece of bread from the pan when cooked and toss immediately in sugar mixture to coat.

Plate up the bread and top with the berry mixture and yoghurt.
