Christmas Panettone Trifle

The start of December marks the beginning of the festive season, so why not get yourself in the Christmas mood with this Christmas Panettone Trifle? It’s a great way to use up the Panettone you’ve had sitting in the cupboard all year.

Ingredients (serves 6)
825g canned peaches
1/4 cup brandy
450g panettone
250g strawberries, sliced
1 litre vanilla custard
1 cup thickened cream
1/3 cup flaked almonds, toasted
Extra strawberries to decorate

Method
Drain canned peaches and reserve 1/3 cup of the juice. Combine the reserved liquid and 1/4 cup brandy. Cut panettone into bite-sized cubes. Spread the panettone into a 2.5 litre glass bowl and drizzle with brandy mixture. Top with the peach slices and strawberries, sliced. Pour over vanilla custard. Cover and refrigerate for at least 3-4 hours (It tastes better if you can leave it overnight). Just before serving whisk thickened cream until firm. Spoon over and sprinkle with 1/3 cup flaked almonds, toasted, and strawberries.
