Golden Syrup Dumplings

These Golden Syrup Dumplings may not get the healthy heart tick of approval, but they’re quick and easy to make and taste delicious, so they’ve got the YOURLifeChoices thumbs up as a ‘sometimes’ treat to share with friends.

Ingredients
Dumplings
1 cup self-raising flour
1 dessertspoon butter
1 egg
1 pinch salt
a little milk

Syrup
2 cups water
1 cup sugar
2 dessertspoons butter
2 tablespoons golden syrup

Method
Sift flour and salt into basin. Rub in butter. Beat egg and add to flour to make a dry dough. Roll dough into small dumplings (size of a small walnut) between your hands. Place all ingredients for syrup into 4-pint saucepan, and heat until boiling. Add dumplings all at once. Cook gently 15-20 minutes (put them on as you serve the first course of your meal). Serve with vanilla ice-cream and cream.

I used to make these when the children were young and money was tight, and everyone loved them. If I had a lemon available I would add the grated rind and juice to the syrup mix too. I must try it again and see what my grandkids think of it - that's the only times I make desserts nowadays!

I make them for my students from all different countries who HOMESTAY with me. They all love them. Maybe a bit sweet for the Asian taste but they are happy to eat them in smaller amounts than I serve myself. Yummy!
