Healthy Banana Bread and Butter Pudding

Ingredients
40g reduced-fat spread
9 slices oatbran and honey bread (can be substituted for similar)
2 cups skim milk
3 eggs
2 tablespoons yellow box honey*
1 teaspoon ground cinnamon
2 small bananas, thinly sliced
Low fat ice cream

*It is important you use yellow box honey as it is a low GI honey

Method
Preheat oven to 170°C (150°C fan forced).
Cut the crusts off the bread slices and cover both sides in spread.
Cut each slice in half. Whisk the honey, cinnamon, eggs and milk together.
Layer the bread slices in an ovenproof dish and top with the banana slices.
Pour milk and egg mixture over the slices and set it aside for ten minutes. Bake for 45 to 50 minutes until puffed and golden. Serve with low-fat ice cream.
