Healthy recipes to makeover your insides

Give your diet a makeover with these healthier versions of family favourite dishes.

Home-made wedges

Ingredients
2 medium potatoes per person
Sea salt
Fresh ground pepper
Rosemary
Olive oil

Method
Preheat your oven to 200°C. Cut the potatoes lengthways, then slice each half into wedges lengthways, about half an inch wide at their widest point. Place into a mixing bowl and add enough oil to lightly cover each wedge completely. Season well with salt, add pepper and rosemary to taste and mix through so seasoning covers wedges evenly.

Spread wedges out in a single layer on a baking tray and cook for 30-40 minutes, turning every 10 minutes. Serve and enjoy!

For many years I have made "chips" in my electric frypan, just with a smear of oil in the pan [I use a maximum of 1 teaspoon of oil for enough chips for 2 people]

Cut the potatoes to normal chip size, roll them in the oil in the pan, then set on a medium heat for about 20 minutes with the lid on. Once cooked through, turn chips, then take the lid off for another 5 minutes.
This has almost no oil, but tastes similar to fried chips. Its also a lot quicker, cheaper and easier than turning on the oven.

i dont have an electric fry pan. any suggestions??

An ordinary spun metal based frypan with a lid is OK to use-just cook "chips" on a medium heat. The potato actually almost steams with the lid on, but browns as well in the thin smear of oil on the bottom of the pan. Take the lid off for the last few minutes.
