Jill’s Moist Carrot Cake

YOURLifeChoices subscriber Jill has been kind enough to share her recipe for a delicious Moist Carrot Cake. Do you have a recipe you would like to share?

Ingredients - cake
1/2 can crushed pineapple
3 cups grated carrot
1 cup of coarse coconut
1 tablespoon brown sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon bi-carb soda
1 teaspoon cinnamon
1/2 cup walnuts
2 eggs

Topping
1/2 oz butter
4oz cream cheese
1 cup icing sugar
Coconut to sprinkle on top

Method
Preheat oven to 170C.
Beat eggs and add all ingredients into a large bowl and mix together.
Pour mixture into a lightly greased baking tin and bake 40 to 50 minutes.

Topping
Cream together butter, cream cheese and icing sugar.
Spread on cake when cool and sprinkle with browned coconut.

what is all purpose flour, does that mean PLAIN flour??

Yes all purpose is plain flour

Do you drain the pineapple first? And how come there is no oil or butter?

Answer your questions. I use SF flour... I buy pineapple pieces $1 a can from aldi & crush it with the kitchen wiz. use half the can juice & all and keep the other half for the next cake. It doesn't need oil or butter as the crushed pinapple gives it the moisture. I make this cake all the time as my friends say it is the best Enjoy
