Lesley’s Swiss Bircher Muesli
Start your day the low-fat healthy way with a delicious bowl of Bircher Muesli. So tasty and filling is this treat that Debbie has even been known to have it as a dessert.
1 – 2 tablespoons quick oats per person
Low-fat Greek yoghurt and a little bit of orange juice to moisten to porridge consistency
Grated lemon rind to taste (usually about 1 teaspoon)
Squeeze of lemon juice
1 grated green apple per person
Any sort of berries – keep some to decorate
Crushed or slivered almonds
Leave the oats and yoghurt/juice to soak for about 1 hour.
Mix in fruits, decorate with some of the berries and sprinkle almonds on top.
