Mango Thai Salad

Ingredients
1 mango
1 lime
1 red chilli
2 spring onions
handful of cashew nuts
1/2 cup bean sprouts
1 cooked chicken breast, sliced
handful each of Thai basil and coriander
2 tablespoons fish sauce
1 tablespoon of plam or brown sugar

Method
For the dressing:
Finely chop the red chilli and combine in a bowl with fish sauce, lime juice and sugar. Rolling the limes before use makes them easier to juice.
Stir well to dissolve the sugar.

Peel and dice the mango and place in a large bowl
Tear or roughly chop basil and coriader and add to the mango, along with the beansprouts.
Roughly chop the cashew nuts and finely slice some spring onions. Add to the salad.
Pour the dressinf over the sald mix, add the chicken and toss until ingredients thoroughly coated.

Serve with a chilled glass of Riesling, the prefect accompaniment to Thai food.
