                  MARSHMALLOW

 

Ingredients.

Dessicated Coconut - browned lightly in oven or just use white.

 2 cups Sugar                 ¾ cup boiling water

Pinch Salt                     

1 ½ tabs. Gelatine In ½ cup boiling water

 

Method

 Place sugar, ¾ cup boiling water, salt, in saucepan and heat until sugar dissolves.  Let cool.

 Put Gelatine in ½ cup boiling water, stir to dissolve.  Allow to cool slightly, add to sugar and beat with electric beater until thick and fluffy.  Add some vanilla.

Can add some colouring to make different colours.

Place coconut in bottom of the size tin you want to use, I usually  use a slice  tin. Put Marshmallow in then layer coconut over the top too.  Makes it easy to get out of the tin then.

When set cut into sizes you want, tip out onto paper or foil then roll in coconut.

PS - Beat in a large bowl (my Mixmaster has 2 sizes) because it makes a bowl full like meringue.

Could stevia be substituted for sugar ???

I suppose Abby, but I don't know much about those things.  Natvia is another one but don't know how it works or how much you need to substitute in relation to sugar.

Are they artificial ingredients ???

Just went to a site and if you use Natvia you use equal quantities of Natvia to sugar as it's the same consistency as sugar.  Stevia you will have to look that up for yourself.

Never heard of Natvia before but found some interesting info

Apparently Stevia is 300 times sweeter than sugar, so they blend Natvia with erithrinol which is obtained from melons and grapes so that it can be used spoon for spoon like sugar if you buy the granular sweetener for coffee and tea etc.

and also comes in a baking sweetener

Bet all Diabetics are embracing it :)
