Cooking for one

I'm looking for some recipes that just suit one person. I'm not and have never been a very good cook, but would like to try to see how I go. I would like to start with simple stuff that doesn't include seafood and work my way up (hopefully!).  If anyone has some good hints and/or recipes for one I would love to read them.   Lozz

I cook dishes and then divide them into single portions and freeze them

Then I take out the number of portions I require according to the number of people for a meal.

This saves you a lot of time in having to cook individual meals.

Cooking for one -  easy peasy -  ONE PAN BABY ROAST - get an oven roasting tray (line with baking paper)  - pop in 1 carrot - one thickish chicken drumstick - 1 x small onion -  1 x thickish piece of pumpkin -  few chunks of peeled potato .... toss these lightly in Canola oil .....put in oven for 1 hr 20 mins on 120..(slow) ......turn spuds halfway thru.....microwave a few baby peas/beans...some chopped cauliflower in other lil bowls...voila!  A baby roast in no time!  Just double ingredients if for two .... :-)  Add Tandaco stuffing mix if you choose ....and make Gravox Supreme gravy...............yummmm  :-)

Gravox has come a long way since we were all kids...lol....the new pouch ones are almost restaurant quality.......   :-)

Yes Viv, when  it's my turn to do a spot of cooking, give the wife a break I use this site, never been disappointed!

I buy the 1kg + sized lasagnas from the s/market especially when price is reduced to $10 ( happens a lot) before cooking .... divide them into 4 containers, freeze 3, cook 1.... the Woolies Select brand is very tasty, freezes well and with a small salad  is a cheap, easy meal.... o'wise, I do as Abby suggests, just make more and freeze extra portions ... must admit that I'm not into cooking and often buy the Lean Cuisuine/Healthy Choice frozen meals, I quite enjoy them ( almost no washing up) :)

Cook a nice beef bolognaise sauce, enough for a family. And freeze the extra in single portions. Can turn the extras into mince and potatoes, chilli con carne, taco fillings etc with slight adjustments on heating up.

I buy a tray of 5 scotch fillet steaks from Aldi for $18.99 and freeze them individually too. Nice to have a steak, mash and veg meal. I grill my steak and cheat with instant mash and one of the frozen Birds Eye Sides roast veg mixes.

 

Booky you should be ashamed using instant mash ..

AN airfryer is the way to go for one or two people. Lots of recipes online and very quick and healthy cooking.....

What brand of airfyer have you got Deanne ?

There seems to be so many on the market... would like one that is recommended.

For any wet dishes I use a Ronson pressure cooker.It makes the toughest meat tender in 30 mins.

Slow cooking in a crock pot is better...
