What? You didn't know that bananas can make some of the best ice cream? Well, I didn't either until last week, when my sister called me up and mentioned that she's been freezing bananas and then pureeing them into ice cream.

"That's the sort of thing you discover," she sighed, "when all your friends are vegan, gluten-free, dairy-allergic, and you're on a sugar-free diet." I'd deal with a list of dietary restrictions twice as long, though, if it meant discovering more treats like this one.

It turns out that frozen bananas are good for more than just dipping in chocolate. If you freeze a banana until solid, then whiz it up in a blender or food processor, it gets creamy and a little gooey, just like good custard ice cream. I was surprised at this bit of kitchen wizardry; I assumed that a blended banana would be flaky or icy. But no — it makes creamy, rich ice cream.

Some bananas, depending on their ripeness, have a bit of that green aftertaste. My sister has been experimenting with adding in another ingredient or two, like a tablespoon of peanut butter and another of honey. Delicious!

Off to shop tomorrow so will buy extra bananas and make that U-beaut healthy ice cream.

Wonder if it would go a bit too runny if a bit of Coconut Cream added? Love taste of cocnut.

Well worth giving it a go  - currently if I have excess bananas I slice  and freze them with lemon juice and subsequently use then in shakes.

If you do not like iceblock texture perhaps you could try dessicated coconut for the flavour.

Vic, you would like pastry made with Coconut oil I would thinl. We enjoy it but I use half yoghurt (full cream with it).

Robi should like it too, I think she's vegan and that site has lots of vegan recipes.

Viv adding the coconut sounds nice too.  She tried honey and peanut butter too, also Nutella.

There are some great recipes on that site as well as lots of useful information.  I have saved it to favourites so I can have a good browse when I have time.

Happy ice cream eating although it's not ice cream eating weather here.    Down to about 8 C and abolutely pouring with rain.  Trees blown down everywhere, power out heaps of places with lines down.

I'm glad to have found this 'recipe' as I have a number of frozen bananas so will give this a go - I will be surprised how it will compare in taste, texture, etc. with a "bought" one!!
