Banbury Cakes

I wanted something simple to make at 7 this morning to take to a morning tea and came up with this old family favourite. Vivity and Sandi, do you remember Banbury Cakes? They came out so well, just thought I'd put up the recipe for anyone who is interested.

 Banbury Cakes

• 50g butter, softened
• 1 tbsp honey that’s runny 
• 12 gratings of whole nutmeg 
• ½ tsp ground allspice 
• ½ tsp ground cinnamon
• 50g each of raisins, currants and candied citrus peel
• Flour, for dusting
• 300g puff pastry 
• 1 egg, beaten 
• 3 tbsp granulated sugar 

Preheat oven. Line a baking tray with greaseproof paper. Cream the butter and honey together, then stir in the spices. Add the dried fruit, candied peel  and stir until well combined.

Roll out the pastry to about 2.5mm thick. Using a 10cm pastry cutter or small saucer, cut out 10 circles. 

Spoon the filling into the centre of each disc, leaving a little empty space around the edges. Brush either side of the filling with a little egg. Bring the sides of the pastry up into the middle and crimp slightly to make little purses. 

Turn the cakes over so the fold is on the bottom and very gently roll them into oval shapes with your rolling pin, being careful not to burst them.

Place the cakes on the tray and, with the tip of a knife, make 3 little cuts on each. Brush with the beaten egg and sprinkle with granulated sugar.

Cook for 25–30 minutes until golden and firm. Transfer to a wire rack to cool slightly before serving warm. 

 

         This makes 10 cakes

Sorry Mari I only just saw this too.  Things get pushed off the board before you get to see them.

Don't think I know what Banbury Cakes are.  I'm Aussie not English.  Don't make cakes much myself these days.  Very ever really eat cakes and now there's only Bob to eat them all  and then he gets fat so he tells me.

Sandi I am a Aussie and the used to buy Banbury Cakes many years ago in Victoria I have only been in SA for 50 years,Sandi why don't you join Beachside Travellers travel club  we meet 1st Tuesday  of each month at Hackham Football Club Doctors Rd Hackham,I think you live in old Noarlunga not far down the road

Mari I don't think I ever had a Banbury Cake what we had were the very similar Eccles Cakes, think there were several differently named cakes but very similar in fact but originating from different towns. Loved the Eccles Cakes.

Viv...I doubt whether Mari will be looking in...as you know she's abroad awaiting a very important event. However, I found a picture of Banbury cake on the net:

It's very similar to an Eccles cake, though the shape is different and it's interesting to hear that Jessej knows of them. They were shipped to Australia and New Zealand years ago. I've eaten it many times really simple to make and delicious with coffee!

Old thread brought back and just replied to an opening comment by Mari, no no way would she be coming on here when she has far more interesting things going on in U.S. Is this her daughters first child Fleur and how many other grandchildren do they already have?

They have a three year old Viv..in total three grandies....this one will be the fourth for Micha and Mari!
