According to Kate Merker, a chief food director at a lifestyle media brand, spices can gradually lose their ‘vibrancy and potency.’ This means that while your spices won’t necessarily become unsafe to consume, they may not deliver the taste you’re looking for in your dishes.

From a food safety perspective, spices are quite stable. Donald W. Schaffner, PhD, a food microbiology professor, explains that the drying process of spices inhibits the growth of pathogenic bacteria. However, if spices are not stored correctly and moisture seeps in, there’s a risk of mould development, which can be harmful.

Our senses are usually sharp enough to detect any musty or mouldy odours, steering us clear of consuming anything that might be off.

The lifespan of spices depends on several factors, including whether they are whole or ground. Whole spices, such as peppercorns and caraway seeds, can last between 2 to 4 years, thanks to their intact structure that protects the flavorful oils within. 

Ground spices, on the other hand, have a shorter life of about 2 to 3 years, as the grinding process exposes more surface area to the air, leading to faster degradation. Leafy herbs, with their delicate structures, are even more perishable, typically lasting 1 to 2 years.

Manufacturers often provide a ‘best by,’ ‘best before,’ or ‘use by’ date on the packaging, which serves as a guideline for when the product should retain its quality. However, how you store your spices can significantly impact their longevity.

Testing the freshness of your spices

So, how can you tell if your spices have lost their freshness? A simple smell and taste test should do the trick. If you open a jar and are greeted with little to no aroma, or if the flavour is faint when you give it a taste, it’s time to bid that spice farewell and restock with a fresh supply.

To keep your spices in tip-top condition, Merker recommends storing them in airtight containers in a cool, dry place away from heat and light. This means avoiding the temptation to display them on a rack above your stove. Instead, tuck them away in a drawer or cabinet where they’re protected from temperature fluctuations and sunlight.

To add, when purchasing new spices, consider buying in smaller quantities, especially for those you use infrequently. Buy just what you need and use it up while it’s still at its peak.
