Let’s dive in!
Chicken & Spinach Triangles
Crispy, golden parcels filled with creamy chicken and spinach – what’s not to love? These triangles are perfect for a light dinner, a hearty lunch, or even as a party snack. And with just five main ingredients, you’ll have them on the table in half an hour.
You’ll need:
- 250g frozen spinach, thawed
- 2 x 150g packets Coles Shredded Roast Chicken Breast
- 1½ cups (420g) Jalna Greek Style Natural Yoghurt
- 16 sheets filo pastry
- 150g Coles Baby Leaf & Beetroot Mix
How to make them:
- Preheat your oven to 220°C and line two baking trays with baking paper. Squeeze as much liquid as you can from the thawed spinach (nobody likes a soggy triangle!). Mix the spinach with the shredded chicken and 1 cup of yoghurt. Season with salt and pepper.
- Lay out a sheet of filo pastry, keeping the rest covered with a damp tea towel so they don’t dry out. Spray the sheet with olive oil, then layer three more sheets on top, spraying each one. Cut the stack in half lengthways.
- Spoon one-eighth of the chicken mixture onto one end of each strip. Fold the pastry over the filling diagonally to form a triangle, then keep folding until you reach the end. Place on the tray and repeat with the rest.
- Spray the triangles with a little more oil, season, and bake for 15–20 minutes until golden and crisp.
- Serve with the remaining yoghurt and a fresh salad of baby leaves and beetroot.
Tandoori Lamb Chops with Tahini Yoghurt
If you’re after something a little more robust, these tandoori lamb chops are bursting with flavour and take just 20 minutes from start to finish. The secret? A punchy tandoori marinade and a creamy tahini yoghurt sauce.
You’ll need:
- ¼ cup (75g) tandoori paste
- ½ cup (140g) Jalna Greek Style Natural Yoghurt
- 950g Coles Australian Lamb Loin Chops
- 1 tablespoon tahini
- 2 bunches baby broccoli
How to make them:
- Mix the tandoori paste with half the yoghurt. Coat the lamb chops in this marinade and let them sit while you prep the rest.
- Stir the remaining yoghurt with the tahini and a pinch of salt and pepper to make a luscious sauce.
- Heat a barbecue or grill pan to medium-high. Cook the lamb for about 3 minutes each side for medium-rare (or longer if you prefer). Let them rest for 5 minutes.
- While the lamb is resting, grill the baby broccoli for about 5 minutes, turning until tender and slightly charred.
- Serve the lamb with the tahini yoghurt and grilled broccoli.
Why we love these recipes
- Minimal fuss, maximum flavour: With just five ingredients, you can create meals that taste like you’ve spent hours in the kitchen.
- Healthy and satisfying: Both recipes are packed with protein and veggies, making them perfect for a balanced diet.
- Perfect for leftovers: The triangles are great cold the next day, and leftover lamb can be tossed into salads or wraps.

Tips for success
- Don’t be afraid to swap ingredients based on what you have. No baby broccoli? Try green beans or asparagus.
- Filo pastry can dry out quickly, so keep it covered with a damp tea towel while you work.
- If you like a bit of heat, add a pinch of chilli flakes to the chicken mixture or the tandoori marinade.
Get creative!
These recipes are a fantastic base for your own creations. Add a handful of feta to the triangles, or toss some roasted sweet potato through the salad. For the lamb, try a squeeze of lemon over the top for extra zing.
