Apple Brown Betty is a traditional baked pudding, similar to a crumble. The brandy adds a warming kick, but can be left out if preferred.
Ingredients (serves 6)
- 30g butter
- 175g stale breadcrumbs
- 1kg cooking apples, quartered, cored, peeled and thinly sliced
- 2 tablespoons brandy
- 125g caster sugar
- 1 teaspoon lemon juice
- 2 teaspoons ground cinnamon
Preheat oven to 180°C.
Place the apples in a dish, toss with the sugar and cinnamon, then pour over the brandy. Set aside until needed.
Melt the butter in a frying pan and add the breadcrumbs. Stir over a medium heat for five minutes, until crisp and golden. Remove from the heat.
Press one third of the crisp breadcrumbs over the bottom of a pudding dish, then layer with half of the apple mixture. Top with another third of the breadcrumbs, then the remaining apple mixture.
Cover with the remaining breadcrumbs and pour over any juices left from the apple mixture.
Sprinkle the top of the pudding lightly with caster sugar.
Cover the dish with foil and bake for about 20 minutes.
Serve warm with cream or ice cream.
