For a super simple breakfast meal that’s sure to impress, try these Baked Eggs in Avocado.
Ingredients (makes two)
- 1 avocado
- 2 eggs
- Sprinkle of cheese
- Pepper to taste
- Bacon bits (optional)
Preheat oven to 220°C (200°C in a fan-forced oven). Slice the avocado in half and remove the pit. Scoop some of the avocado out from the centre of each half, to make the hole larger (enough for the egg to fit inside). Place the avocados on a baking dish. Crack an egg into each avocado half. Top with cheese and bacon bits as desired, and cook for 15 to 20 minutes, or until egg whites have set. Baking time will vary depending on size of avocado and eggs. Remove from oven, season with pepper and enjoy.
