Beef and Barley Soup

Burger Soup

One great thing about the winter months is the opportunity to indulge our taste buds in some fabulous soups.

Ingredients

  • 1 tablespoon oil
  • 1 onion, finely diced
  • 2 sticks celery, diced
  • 2 beef stock cubes
  • 400g can diced tomatoes
  • 1/2 cup parsley, chopped
  • 350g minced beef
  • 1 carrot, diced
  • 1/2 teaspoon dried thyme
  • 1/3 cup pearl barley
  • 440g can tomato soup

Method
Heat the oil in a frying pan and cook the onion for two minutes. Add the mince, breaking it up while cooking for five minutes. Stir in the remaining ingredients, except the parsley. Add 3 1/2 cups of water. Bring to the boil, reduce the heat, cover and simmer for an hour. Season to taste and sprinkle with the parsley to serve.
