Serves: Two

Time: 15 minutes

Ingredients

  • 5 eggs
  • 1 tablespoon butter
  • 2 tablespoons ricotta
  • 1/2 cup parmesan, finely grated
  • salt, to taste
  • 2 tablespoons chopped parsley leaves

Method

Lightly whisk eggs and season with salt. Heat a pan over a medium-high heat until hot. Add the butter and allow to melt. Then pour in the whisked eggs and stir quickly to move the cooked part of the egg away from the heat for a couple of minutes. When the eggs are starting to look cooked, stop stirring and flatten the top with a spoon and keep cooking for another minute or so until there is only a little runny egg remaining on top. Remove from the heat. Scatter Parmesan over eggs and drop teaspoonfuls of ricotta over the top. Scatter parsley on top and serve.

Once again the photo doesn't match the recipe but is does indicate what other ingredients may be added.

I agree Max. It looks like there are bits of bacon and onion in there as well and the green stuff looks more like chives than parsley. Don't you wish they'd get it right!

Four out of four comments above all negative because these readers have no imagination. YLC staff, you are doing a great job with this FREE website to your members, even though a lot of them (like the ones above) probably couldn't be pleased no matter what you print. Merry Christmas.
