Toast is an inexpensive snack or fast lunch so, why not take it one step further with our healthy bruschetta option?
Time: 15 minutes
- 1 head of broccoli, chopped
- 1 teaspoon olive oil
- 3 cloves garlic
- 1 teaspoon chilli flakes
- 1 anchovy, finely chopped
- freshly grated Romano or Parmesan cheese
- salt and pepper to taste
- your choice of bread (we recommend a bread stick or baguette)
Heat oil in a medium-sized pan (preferably with a fitted lid), over a medium heat. Cook garlic and chilli flakes for about two minutes or until fragrant, careful not to brown. Add in the chopped anchovy and cook for an additional minute. Add broccoli and 1/4 cup of water, covering with a lid and allowing to cook for 3 minutes. Remove lid, toss broccoli mixture and cook for another 2 minutes or until water has evaporated and broccoli is tender.
Spoon mixture onto toasted bread and top with grated cheese. Add salt and pepper to taste.
Serving suggestion: for an extra tang, add roasted or semi-dried tomato to the topping.
