2 medium carrots, grated
1/2 teaspoon vanilla essence
1 cup plain flour
1/2 cup chopped walnuts
1 teaspoons bicarbonate of soda
1/2 teaspoon mixed spice
1 cup caster sugar
1/2 cup oil
1 & 1/2 tablespoons softened butter
3 tablespoons cream cheese
1 teaspoons grated lemon rind
1 & 1/2 cups sifted icing sugar
Beat butter and cream cheese until smooth. Beat in lemon rind and icing sugar.
Heat your over to 200’C.
Now put all the items apart from the walnuts and carrots in a bowl. Beat on a low speed until smooth and then stir in the carrots and walnuts and mix well.
Pour mixture into well-greased 20 cm ring tin. Bake for 45 minutes. Remove and leave on a rack to cool. Spread with frosting when cool. Enjoy!
