Chicken Penne Pasta

Today’s Pasta with Chicken Sausage, Cheese and Spinach is fast, easy and versatile. The chicken sausage makes it a healthier alternative to pork or beef sausage. Try adding more vegetables, such as chopped zucchini or capsicum.

Serves: 4-6
Time: 40 minutes

Ingredients

  • 225g penne pasta
  • 2 1/2 cups to 3 cups tomato pasta sauce
  • 1 1/2 tablespoons olive oil
  • 450g chicken sausage, cut into bite-sized pieces
  • 100g to 150g baby spinach
  • 1 1/2 cups (140g) shredded mozzarella cheese


Method

Preheat the oven to 180° C. Cook penne according to packet’s instructions. Drain, run pasta under cold water and set aside when finished. Meanwhile, in a large frypan, heat 1 1/2 tablespoons of olive oil over medium-high heat. Add the chopped sausage for 5 to 7 minutes until thoroughly cooked. Add in the tomato sauce and cook for about a minute. Gently add in the spinach, cooking for about 30 seconds, until it begins to wilt.

Finally add in the pasta and stir through. Top with the mozzarella cheese and either put the pan into the oven or put mixture into an oven-safe casserole dish, baking for about 10–12 minutes until cheese begins to bubble and brown.
