Choc Chip Muffin for One

Our single-serve choc chip muffin is a quick way to stave off afternoon hunger pangs. Go on – give yourself a sweet treat!

Serves: One

Time: 25 minutes


  • 3 tablespoons flour
  • 1/4 teaspoon baking powder
  • pinch salt
  • 1 1/2 tablespoons chocolate chips
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon butter, melted
  • 1 tablespoon milk
  • 1 tablespoon sugar



Preheat oven to 180°C and line a muffin tray with baking paper. In a small bowl add the flour, baking powder, salt and chocolate chips.Stir until well combined. Add vanilla, melted butter, milk and sugar. Mix until just combined. Pour batter into prepared muffin tin. Bake for 15 minutes and let cool before enjoying.

    with the cost of electricity / gas why would any one in their right mind turn the oven on just to cook 1 cup cake

    Agree there are lots of good cook in a cup recipes that can be done a lot cheaper in the microwave.

    However something a little healthier would be a lot better instead.

    Given today's headline topic about living longer, surely this recipe is counterproductive. I don't want to hear that rubbish about being part of a healthy balanced diet. Its not.

    I usually cook cakes when oven is being used eg cooking a roast. Makes full use of the oven.

    seems to be an awful lot of flour for 1 muffin
