Deliciously rich and gooey, these Chocolate Fudge Cupcakes are quick and easy to make!
1 cup unsweetened applesauce
1 teaspoon canola oil (can use olive oil)
1/2 cup raw demerara sugar
2 teaspoon vanilla extract
3/4 cups white whole wheat flour (this type of flour works best)
1/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup chocolate chips
Preheat oven to 180’C
Spray 8 muffin cups on the muffin tin
Mix the applesauce, 1 teaspoon canola oil, and vanilla extract
In a separate bowl mix the dry ingredients
Combine the wet ingredients with the dry and mix well
*Please note that the mixture will appear very thick, that is how it is supposed to be*
Fill the 8 muffin cups, and bake for 20-25 minutes.
The muffins are done when they are barely firm to the touch on the top.
Let them cool for 10 or so minutes before eating.
