Chocolate Hedgehog

We think our recipe for Chocolate Hedgehog is without a doubt the best, but why not try it for yourself? It’s a great slice to keep refrigerated and snack on during the week when you get the 3pm stomach grumbles. 

Serves: 24

Time: 1 hour 30 minutes


  • 175g butter
  • 2/3 cups caster sugar
  • 4 tablespoon cocoa powder
  • 2 tablespoon desiccated coconut
  • 1 egg, lightly beaten
  • 1/2 cups pistachios, shelled
  • 250g milk coffee biscuits, broken into pieces

Chocolate topping

  • 250g dark cooking chocolate
  • 50g butter



In a saucepan, melt the butter, sugar and cocoa over medium heat for three minutes and remove from heat. Add coconut, egg, pistachios and biscuits and combine. Press mixture into a baking paper lined 28 cm x 18 cm slab pan. Chill for one hour. Melt butter and chocolate over simmering water. Spread over slice and place in the fridge to set for 20 minutes.

    Sounds yummy and looks yummy, but what are the pieces of pink stuff shown in the picture? They look like marshmallows and there is no mention of marshmallows in the recipe.
