Everyone loves a good scone with their tea or coffee. Why not give your regular scone recipe a miss and try our healthy and scrumptious Cinnamon and Date Scones instead. These scones are a perfect afternoon treat for yourself and friends.
Time: 30 minutes
- 2 cups wholemeal self-raising flour
- 1 teaspoon cinnamon
- 30 g margarine
- 1/2 cup chopped dates (soiaked before chopping)
- 1 cup milk
- 200 g smooth ricotta cheese
- 2 teaspoons honey
- 200 g bananas
In a large bowl, mix the cinnamon and flour, rub in the margarine with fingertips until the mixture resembles fine breadcrumbs and then stir in dates. Use a butter knife to gently mix in milk until just combined. Place the dough onto a lightly floured surface and knead lightly before patting out to a 3 cm thickness. Use a floured scone cutter to cut 12 rounds from the dough, place onto a baking paper lined tray. Bake at 200°C for 10-12 minutes.
Mix ricotta and honey together, spoon onto warm scones and serve with banana slices – or fresh fruit of your choice.
