The hardest thing to find when going gluten free is finding treats that are flavour-full. We've found one such treat!
YOURLifeChoices member has switched to using coconut flour as it is gluten-free and is keen to have some new recipes to try. We’ve come up with this simple and delicious coconut bread, but do you have any others?
100g sifted coconut flour
40g butter or margarine, melted
2 tablespoons honey
1/2 teaspoon salt
1 teaspoon baking powder
Preheat oven to 175°C and lightly grease a small loaf pan.
Blend together eggs, butter, honey and salt until you have a smooth batter. Combine coconut flour with baking powder and add gradually to batter, whisking continually to ensure no lumps.
Pour into loaf pan and bake for 40 minutes. Allow to cool in pan for five minutes, then remove and place on a rack.
