Enjoy a warm coffee muffin for afternoon tea
Why not whip up a batch of our Coffee Choc Chip Muffins? We think they’re some of the tastiest muffins you’ll ever try. We had you at coffee and chocolate, didn’t we?
- 2 cups flour
- 1/2 cup chocolate chips
- 2/3 cup milk
- 2/3 cup sugar
- 1 egg, beaten
- 3 tablespoons instant coffee
- 5 tablespoons melted butter
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 teaspoons vanilla extract
Preheat the oven to 180°C. Grease a 12-hole muffin tray. Mix the flour, sugar, chocolate chips, baking powder, and salt together in a bowl.
In a second bowl, whisk the milk, coffee, vanilla, butter, and egg together. Pour the wet ingredients into the dry ingredients and stir until just moistened. Spoon the mixture into the greased muffin tray and bake for 15 minutes. Serve warm.
