Coronation Chicken

Serves 4

Ingredients
4 cooked diced chicken breasts
100 ml crème fraiche
100 ml mayonnaise
2 teaspoons mild curry powder
1 tablespoon chutney
1 peeled, diced mango
Parsley to garnish

Method
Mix mayonnaise, crème fraiche, curry powder, chutney and mango.
Stir in chicken and garnish.
Serve with fresh bread rolls and green salad.

    It is clearly stated to serve the above dish with bread rolls as shown in the photograph above.....

    It does look like pastry, reminding me of English pasties but, after reading the ingredients, realised not. It sounds really tasty but I hope that someone at ylf actually tried it themselves. I recently made the bread and butter pudding (ylf 27April,2011, yes I do keep them!)) for visitors dessert and while making it I really felt the milk amount was double what it should be but, didn't follow the gut and the dessert was a watery (whey), soggy failure, part of which fortunately tasted yum so was eaten; but very disappointing!

    I have a recipe for Coronation Chicken by Constance Spry in "Like Grandma used to make" and it is not the above recipe! Which is the correct one?

    Thanks Pip thats exactly what I thought, and you are right you cant trust some of the recipes as people do leave things out,I cook for a living and go with my gut feel also.
