Creamy Bacon and Mushroom Pasta

This Creamy Bacon and Mushroom Pasta recipe is the easiest comfort food you’ll ever make. From stove to table in 20 minutes, it’s also deceptively fast to whip up! Serve this dish as a main course or as a side to chicken or red meat.

Serves: 2

Ingredients

  • 2 bacon rashers, diced
  • 60g butter
  • 2-3 tablespoons flour
  • 1 cup boiling water
  • 1/2 cup sour cream
  • 250g penne pasta
  • 1/2 onion, chopped
  • 1 large garlic clove, crushed
  • 250g mushrooms, coarsely chopped
  • 1/4 cup each of mozzarella, tasty and parmesan cheeses
  • small handful of fresh parsley, chopped

 

Method

In a large non-stick fry pan, fry up the bacon over medium heat until crispy. Set aside.

Melt half the butter, add flour and cook for one minute. Add one cup of boiling water to mixture and stir until it boils and thickens. Stir in sour cream and simmer for five minutes.

Meanwhile cook the pasta according to the packet instructions, drain and set aside.

Heat the remaining butter and cook mushrooms, onion and garlic until soft and golden. Season with salt and pepper.

Combine the sauce, pasta and mushroom mixtures together and place in an ovenproof dish. Top with the cheeses and cook for 15-20 minutes. Sprinkle with parsley before serving.
