An easy to make leek gratin – the perfect side dish.
This easy to make Italian leek gratin can also be made with either onions or shallots – or a combination of them all.
- 12 leeks, white part only, thinly sliced
- 2 cups mascarpone
- 1 teaspoon ground nutmeg
- 1 teaspoon cracked pepper
- 1 1/2 teaspoons sea salt
- 1/2 cup vodka
- 2/3 cup Parmesan cheese, grated
- 1 tablespoon butter
Mix the mascarpone, nutmeg, pepper, salt and vodka in a bowl. Stir in the leeks making sure they are evenly coated.
Grease an oven dish with the butter and spoon in the leek mixture.
Sprinkle over the cheese and bake at 200ºC for 30 minutes or until the crust is golden.
