We often think of pumpkin as a vegetable but it is actually a fruit – a berry to be precise. It’s delicious in this steamed pudding which makes a healthy dessert.
Ingredients – serves six
- 280g pumpkin, peeled and diced into 2cm cubes
- 3 eggs
- 2/3 cup natural yoghurt
- 2 tablespoons honey
- 50g dried dates, chopped
- 1/4 teaspoon cinnamon
- 1 teaspoon minced ginger
- 1/4 teaspoon mixed spice
- 2 tablespoons flour
Steam the pumpkin and allow to cool.
Whisk together the eggs, yoghurt, honey, dates, spices and flour. Mash in the pumpkin.
Pour the mixture into six 125ml molds and steam for 20 minutes.
Allow to cool slightly before you serve.
