  • 2 cups milk

  • 1 cup plain flour

  • 1 teaspoon salt

  • 1 teaspoon vanilla sugar

  • 4 tablespoons butter

  • 3 eggs

  • 1 green apple – peeled, sliced and core removed. Keep in water with a dash of lemon juice

  • 8 slices of cooked bacon, strawberry jam, syrup

  • Granulated sugar and ground cinnamon to dust

Mix the white flour, salt, and vanilla sugar, then whisk the eggs.
Next, make a hole in the flour mixture and pour in the eggs and a splash of milk and stir.
Slowly add more milk until consistency is to your liking.
Before you start frying the pancakes, melt the butter in the microwave and whisk most of it through the batter.
Add the remaining butter to the pan and heat, then fry off some of the apple slices and bacon.
Add enough batter to the pan to take up the entire surface. The pancake should be very thin as opposed to a typical fluffy American pancake.

Serving Suggestions:
Top with powdered sugar and sprinkle with ground cinnamon, or why not try strawberry jam

    Maybe that's why there are lots of question marks in the recipe? It does sound rather yum though!

    before you start this, get your cholesterol checked. 4 tbsp butter !. You're right Janetta, that is a lot, in fact too much. Instead of ordinary milk use buttermilk, and fry apple and bacon in a little margarine /canola oil. As for the pikelets, which is what these look like, just margarine, though a little butter if you insist, buttermilk make great crepes as well, recipe from a Frenchman in Kuranda, (some of you may know it.)his shop/cafe is not there now.
