Easiest Christmas Fruit Mince

YOURLifeChoices member Ron has kindly shared his recipe for the easiest Christmas fruit mince.

Ingredients (Makes about 24 pies)

  • 200 g mixed fruit.
  • 2 tablespoons golden syrup
  • 1/4 cup brandy
  • 1 teaspoon lemon rind
  • 1 teaspoon mixed spice

 

Method
Place all ingredients in a saucepan. Simmer for five minutes, stirring occasionally. Allow to cool.

To make the pies, use your pastry of choice and fill the cases with the fruit mince.

Tip – the fruit mince can be made three months ahead and kept in the refrigerator until you are ready to use. The longer the mince is left the better as the brandy will flavour.

    Do try my fruit mince recipe so easy. Can be put through a kitchen processor to cut the fruit smaller and make a smoother mince. I made a batch the other week but they didn't last long.Very nice and tasty, Happy Christmas.
