Easy Fish and Zucchini Laksa

Good Friday typically means having fish for dinner. So, for something different but perhaps more tasty than the traditional, we have a super Easy Fish and Zucchini Laksa for you.

Serves: Two

Time: 20 minutes

Ingredients

  • 2 medium zucchini
  • 1 jar laksa paste
  • 1 400ml can coconut milk
  • 400g white fish, flesh only, diced.
  • handful fresh basil leaves

 

Method

Thinly slice the zucchini into long strips, similar to noodles. Sprinkle with salt and set aside. In a saucepan, place the laksa paste and coconut milk and bring to a simmer. Add the zucchini and continue to simmer until cooked through, which takes about five minutes. Add the fish and bring back to a simmer. Cook for another two minutes, until fish is done.  Season to taste and serve over steamed rice with the basil as a garnish.
