Serves: Eight slices

Time: Two and a half hours

Ingredients

  • 1 pre-prepared tart crust
  • 1 small packet instant vanilla pudding mix

  • 2 tablespoons lemon juice
  • 1 tablespoon caster sugar

Method

Using your fingers to work the tart crust into a tart pan and cover with plastic wrap. Put in the fridge for 30 minutes.

Preheat the oven to 180°C and bake the crust for 25 minutes until golden. Remove and leave on a wire rack to cool.

Following the directions on the pudding mix, prepare the vanilla pudding and let it set in the fridge for 30 minutes. Spread the pudding in a thin layer over the crust.
