This single serve vegetarian lasagne is a quick and easy take on the classic version.
It might not be traditional but this single serve lasagne is a quick and easy take on the classic version, ready in 15 minutes. This recipe is vegetarian but you could add beef mince and extra veggies to really amp up the flavour and round out your meal!
Time: 15 minutes
- 1/2 cup ricotta cheese
- 1/4 cup spinach, chopped
- 2 tablespoons parsley, chopped
- 2 tablespoons grated Parmesan
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup pasta sauce
- 4 lasagne sheets, broken in half
- 1/4 cup mozzarella
Mix ricotta, spinach, parsley, one tablespoon of Parmesan cheese, salt and pepper in a small bowl.
In a small microwave-safe dish, spread a layer of the pasta sauce, top with one piece of lasagne sheet and cover with some of the ricotta mixture.
Repeat three more times. Cover the top layer of lasagne noodles with more tomato sauce and a layer of mozzarella and Parmesan.
Cover dish, allowing room for steam to escape. Microwave on high for seven minutes or until cheese is melted through and pasta is cooked.
Remove and allow to sit for five minutes before dishing up with a side of greens!
