This warming Minestrone Soup is so easy to prepare – the microwave does all the work! Chock-full of veggies and delicious flavours, this simple homemade soup is the perfect way to see out the last of these wintery days!
Time: 30 minutes
- 1/2 cup pasta shells, spirals or penne
- 1/2 cup carrots, diced
- 1/2 cup zucchini, diced
- 1/2 small onion
- 2 tablespoons olive oil
- 1/2 can cannellini beans, drained
- 1/2 can diced tomatoes, drained
- 300 ml vegetable broth
- 1 teaspoon dried basil
- salt and pepper, to taste
- Parmesan cheese, to taste
Cook pasta on the stove according to packet instructions. Drain and toss with oil, then set aside.
In a large-sized microwaveable bowl, combine carrots, zucchini and onions. Add olive oil. Cover and microwave on high heat for four minutes.
Add the pasta, beans, tomatoes, broth, basil, salt and pepper. Microwave for a further eight to 10 minutes.
Divide soup into serving bowls and sprinkle liberally with Parmesan. Serve with crusty, buttery bread and enjoy!
