Pavlova is often mistaken as a difficult dessert to make, but this recipe couldn’t be simpler. Why not give it a go as a special treat for family and friends?
4 egg whites
1 cup caster sugar
1 teaspoon lemon juice
2 teaspoons cornflour
With an electric mixer, beat the egg whites until soft peaks form. Add the lemon juice, sugar and cornflour and beat until stiff and glossy, which will take at least 10 minutes. On a baking tray covered with baking paper, place your meringue mix and shape into a large circle.
It is important to leave the centre slightly hollow. Bake on low in the oven for one and a half hours or until crisp on the outside. Turn the oven off and leave the pavlova to cool in the oven with the door open. Separate from the baking paper and place on a tray. Decorate with whipped cream and your favourite fruits that are in season!
