Who doesn’t love a dish that only takes minutes to prepare?
We share a pasta dish that has wonderful flavours and will only take minutes to prepare and better still, doesn’t have any meat for those trying to cut down.
- 500g spaghetti
- 50g butter
- 4 spring onions, chopped
- 2 cloves garlic, crushed
- 4 tomatoes, seeded and diced
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 400g fetta cheese, crumbled
- Black pepper
Cook the spaghetti according to the packet instructions until al dente. Drain without rinsing, cover and set aside.
Melt half the butter in a large saucepan and sauté the spring onions and garlic. Add the tomatoes, olives and herbs and heat through.
Add the hot spaghetti to the mixture with the remaining butter and fetta.
Season to taste with the black pepper and serve.
