Chicken Korma

Just the right amount of spice gives a kick to Claire’s Low-fat Chicken Korma.


  • 3 tablespoons cold water

  • 1 onion, chopped

  • 1 clove garlic, chopped

  • 1/2 inch piece root ginger, peeled and chopped

  • 25g flaked almonds

  • 1 tablespoon low-fat margarine

  • 250g chicken fillet, cubed

  • 5 cardamom pods, split

  • 3 whole cloves

  • 1/2 cinnamon stick

  • pinch coriander seeds

  • 1 teaspoon ground cumin

  • 300ml tin low fat coconut milk

  • 100ml water

  • Pinch of garam masala

  • Fresh coriander and flaked almonds to garnish

In a food processor, blend the onions, garlic, ginger and almonds with the water in to a smooth paste.
Melt the margarine in a frying pan and fry the chicken cardamom pods, cloves and cinnamon until the chicken is brown, approximately five minutes.
Add the blended paste, coriander and cumin seeds and cook for a further two to three minutes.
Add the coconut milk and water and bring to the boil. Reduce to a simmer, cover and cook gently for 40 minutes.
Stir through the garam masala before serving on a bed of steamed rice, garnished with chopped, fresh coriander and flaked almonds.

    The spices look good but please omit the use of's rubbish and definately not regarded as healthy by anyone who is up to date with food science.

    Use Black Cardamon not Green (This used for cakes, desserts, sweets etc)and grind for better flavour. Black is used for Marinades, Curries, Stews etc. Both Cardamon seeds are available in most Supermarkets or Asian grocery shops.
