- 1/4 cup white flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon baking powder
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 egg
- 2 1/2 tablespoons brown sugar
- 1/3 cup canned carrots, drained
- 2 tablespoon milk
- 1/4 teaspoon pure vanilla extract
In a small bowl, mix the flour, cinnamon, baking powder, baking soda, salt and sugar. Add the milk, carrots and vanilla extract and stir. Pour into greased mugs. Place into microwave and cook for a minute and half depending on the strength of your microwave. Let cool before taking out of mug.
