Whip up this delicious Fruit and Nut Brownie without even switching on the oven
Ingredients
- 65g pitted dates
- 1 small banana
- 1/8 cup milk chocolate bits
- 2 tablespoons cocoa powder
- 1/8 cup flour
- 1/4 cup almond meal
- 1/2 cup raisins
- 1/4 cup macadamia nuts, chopped
- 3 tablespoons shredded coconut
Method
Blend all the ingredients (except the macadamias and coconut) in a food processor until smooth. Stir in the nuts until well combined then press the mixture into a square dish lined with baking paper. Sprinkle over the coconut and press into the mixture.
Refrigerate until firm, cut into squares and store in an airtight container.
Should there be some moisture in there somewhere?
The picture shows chocolate icing, so it is not the recipe. I agree it seems a very dry recipe – the banana would not make that much difference. Be interesting if anyone tries it.

well…did it work, agree seems VERY dry, (cant see the point of the flour if uncooked) as almond meal would have the flour texture and would not need cooking
I have just made this, it is in the fridge now. You need an extra tablespoon of flour as the banana makes it ver tacky.
The mixture fills a Chinese take away container.
I don’t know how it is going to be once it has been in the fridge over night.

It tastes okay, can taste the banaba and the texture is still quite sticky. I wont be making it again.
I will look for a cooked one that I use the rest of the ingredients in.
I won’t waste my time or ingredients then – not a lover of banana anything anyway 🙂
