Grilled Figs

It’s always nice to revisit a classic dish, and one of our old favourites is Grilled Figs wrapped in prosciutto with melted cheese. They are easy to make, full of wonderful flavours and always a crowd pleaser. 

Serves: Two

Time: 15 minutes 

Ingredients

  • 4 figs, halved
  • 100g pecorino cheese, sliced
  • 8 thin slices of prosciutto
  • 3 teaspoons extra virgin olive oil
  • 2 teaspoons sherry vinegar


Method

Heat grill to medium-high. Trim base of figs so they sit flat. Place one or two pieces of cheese on each fig half then wrap in prosciutto. Place figs on an oven tray, drizzle with oil and season with pepper. Grill figs for three minutes until cheese melts and prosciutto starts to crisp. Place on a serving plate, drizzle with vinegar and serve immediately.
