This meal is a guaranteed mouthwatering crowd-pleaser.
For a special treat, why not try an Aussie classic when you cook up these Grilled Lamb Loin Chops on the barbecue?
Ingredients (serves four)
3 garlic cloves, pressed
1 rounded teaspoon paprika
A small bunch of fresh thyme or coriander, chopped
Juice of a lemon
1 tablespoon olive oil
Freshly ground pepper
Salt to taste
Half teaspoon chilli powder (optional)
8 lamb loin chops
Combine garlic, paprika, herbs, lemon juice, oil, pepper and salt in a mortar and pestle and grind to a paste. If you like your food to have a bit of a nip, add half a teaspoon of chilli powder to the mix. Score the lamb as this allows the marinade to penetrate. For a healthier option, at this stage you can also cut off some of the lamb fat. Spread the marinade over the lamb chops and turn to coat. Cover and refrigerate for one to two hours. Remove from fridge 30 minutes before cooking to return it to room temperature. Preheat the grill to high, place the chops on a grilling tray and cook until nicely browned or five minutes each side, depending on their thickness.
Serve with a fresh salad and baked jacket potatoes, or roast pumpkin and grilled tomatoes.
