Grilled Veggie Wraps

Our Grilled Veggie Wraps make an excellent midweek dinner, and are full of vibrant vegetables to look after your health. If you have unexpected guests, simply double the ingredients.

Serves: Two

Time: 10 minutes

Ingredients

  • 2 flour tortillas
  • 1 tablespoon sesame oil
  • 1 cup sliced cabbage
  • 1/2 red capsicum, sliced
  • 1/2 teaspoon dried thyme 
  • 1/2 teaspoon minced fresh ginger
  • 1 tomato, diced
  • 1 tablespoon dark soy sauce
  • 1 lemon
  • 1/3 cup grated cheese

 

Method

Heat oil in a medium frying pan. Add the capsicum and cook until caramelised.

Add the thyme, soy, ginger and the lemon juice. Allow this to simmer until tender. Stir in the sliced cabbage and diced tomato, making sure to mix it well. Cover and let simmer until cabbage wilts. Warm the tortillas in the microwave. Spread the cooked veggies on the tortillas and sprinkle cheese over the top. Then fold the tortilla into a wrap and enjoy.

    You had me until the last line. Have it without the grated cheese and no animal needs to suffer!

    Chickpeas would be a better option because they contain more protein. A slice of beetroot would go down well too.

    Why are they called 'grilled' wraps? Recipe doesn't grill them in the instructions! Maybe call them Warm Veggie Wraps instead.

    Still, they sound nice, maybe for tea tonight!

    Cook and Enjoy whichever way you want. Don't have to bring the Vegan thing into it.
