Hazelnut Pancakes

If you are feeling naughty and want to indulge your sweet tooth than these Hazelnut Pancakes will be the perfect treat for you! Easy to make, they are rich and full of chocolately goodness! Serve with vanilla ice-cream and strawberries to complete this delicious dessert.

Serves: 12

Time: 35 minutes



  • 1 3/4 cups self raising flour
  • 1/4 cup cocoa
  • 1/4 teaspoon bicarbonate soda
  • 1/4 cup caster sugar
  • 11/2 cups milk
  • 1 egg
  • 2 teaspoons vanilla
  • 25g butter, melted
  • Hazelnut chocolate, roughly chopped
  • 100g  cooking chocolate, chopped
  • 1/2 cup cream
  • Vanilla ice cream, to serve
  • Strawberries, to serve



Sift the flour, cocoa and bicarbonate soda into a large bowl and then stir in the sugar. In a separate bowl whisk together milk, egg and vanilla then pour onto the dry ingredients and whisk until just combined. Heat a large non-stick frypan over moderate heat then add a small amount of butter. Spoon a 1/4 cup amount of batter into the pan without crowding. Place some chocolate on each pancake. Cook pancakes 1-2 minutes each side or until golden and puffed. Transfer to a baking tray and keep warm in oven. Cook remaining pancakes. Melt the chocolate and cream together in a bowl over simmering water, making sure the bowl doesn’t touch the water. Stir to combine. Serve hotcakes in stacks with a drizzle of the chocolate sauce, a scoop of ice cream and some strawberries. Serve immediately!

    Oh this looks so beautiful and I bet it tastes just as good but my husband is a brittle diabetic so what do I do. I guess I could imagine the smell and taste.

    Diabetics should be able to make these without sugar by substituting.
